You can find bosses to defeat in your Adventure Handbook. Open the Adventurer's Handbook and make your way to the "Bosses" section. Here you can choose the one that rewards Adventure EXP and start hunting.
You can try the low-level bosses in the Mondstadt area, which will give you about 100 Adventure EXP. Or you can try the elite bosses, which will give about 200 Adventure EXP. However, it should be kept in mind that if you are a beginner you should only go for the low-level bosses. You also have the option of the weekly bosses, which will give you about 300 Adventure EXP.
